Lemon Ricotta Cake with Fresh Berries
paired with Saracco Moscato d'Asti

Light, citrusy, and delicately sweet, this lemon ricotta cake enhances the floral and fruit-forward notes of Moscato. The cake’s soft texture and bright acidity balance the wine’s gentle sweetness, while fresh berries add a vibrant, springtime finish.

Ingredients
For the cake:
1 cup ricotta cheese
3 eggs
¾ cup granulated sugar
Zest of 1 lemon
2 tbsp fresh lemon juice
1 cup all-purpose flour
1 tsp baking powder
Pinch of salt
For topping:
Fresh strawberries and blueberries
Honey, for drizzling
​To serve:
Additional fresh berries (optional)

Directions:
  1. Preheat oven to 350°F (175°C). Lightly grease an 8–9 inch cake pan.
  2. Mix the batter: In a large bowl, whisk eggs and sugar until light and fluffy. Add ricotta, lemon zest, and lemon juice, mixing until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
  4. Combine: Gently fold the dry ingredients into the ricotta mixture until just combined.
  5. Bake: Pour batter into the prepared pan and bake for 30–35 minutes, or until golden and set in the center.
  6. Cool & finish: Let cool completely, then top with fresh berries and a drizzle of honey.
  7. Serve with a chilled glass of Saracco Moscato d’Asti.

Honey-Lime Shrimp Skewers

Light, bright, and slightly sweet, these honey-lime shrimp skewers complement the delicate bubbles and floral notes of Moscato. The citrus enhances the wine’s freshness, while a touch of honey mirrors its natural sweetness, creating a perfectly balanced spring pairing.

Cook Time: 6-8 minutes
​Ingredients
For the shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp honey
Juice and zest of 1 lime
1 tbsp olive oil
1 garlic clove, minced
Salt and black pepper, to taste
Optional: pinch of chili flakes
For garnish:
Fresh cilantro or parsley

Directions:
  1. Prepare the marinade: In a bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, salt, pepper, and chili flakes (if using).
  2. Marinate the shrimp: Add shrimp to the marinade and toss to coat. Let sit for 15–20 minutes.
  3. Skewer: Thread shrimp onto skewers.
  4. Cook: Grill (or use a grill pan) over medium-high heat for 2–3 minutes per side, until shrimp are pink and lightly charred.
  5. Finish: Remove from heat and squeeze fresh lime juice over the top.
  6. Serve warm, garnished with fresh herbs and lime wedges, alongside a chilled glass of Saracco Moscato d’Asti.
