Prosecco D.O.C.
Area of Production: Veneto, Italy
Varietal: Glera & Pinot Noir Alcohol: 11% Wine Notes: Fine bright perlage, light rosé color. Delicate and complex bouquet with fruity notes of peach, green apple and lemon. Floral notes of acacia and rose. Fresh and light on the palate, with balanced acidity and body; round and full bodied structure. Winemaking Technique: The grapes, of suitable quality, are gently pressed, and the obtained must is stored in steel tanks for static decantation. Fermentation, with selected yeasts, takes place at a constant temperature of 60.8°F for 8/10 days. The choice for the spumante base is followed with care and attention by the oenologists, and the wine is placed in autoclaves where, with the addition of sucrose and selected yeasts, the second fermentation occurs (Martinotti-Charmat method) at a controlled temperature of 57.2–59°F. On average, the second fermentation process lasts 15/20 days, and when the spumante reaches defined pressure, alcohol, and sugars, it is bottled. Recommended Pairings: Enjoy rosé bubbles as an aperitif but excellent with fish soups, grilled fish and courses based on mushrooms. Serving temperature 46–50°F. UPC Code: 8008863065596 |
