Prosecco D.O.C.

Alcohol:  11%


Wine Notes:  Crisp and delicate perlage, pale light yellow color. Delicate and complex bouquet with fruity notes of peach, green apple, acacia and lilac. Fresh and light on the palate,with balanced acidity and body; harmonic with a long persistent finish.  

Winemaking Technique:  The grapes, of suitable quality, are gently pressed, and the obtained must is stored in steel tanks for static decantation. Fermentation, with selected yeasts, takes place at a constant
temperature of 60.8°C for 8/10 days. The choice for the spumante base is followed with care and attention by the oenologists, and the wine is
placed in autoclaves where, with the addition of sucrose and selected yeasts, the second fermentation occurs (Martinotti-Charmat method)
at a controlled temperature of 57.2–59°C. On average, the second fermentation process lasts 15/20 days, and when the spumante reaches
defined pressure, alcohol, and sugars, it is bottled.

Recommended Pairings:  Ideal as an aperitif , it is a perfect combination with hors d’oeuvres and delicate first courses.  Also wonderful with sushi, fish and shellfish. Serving temperature 46–50°F.
